I would go with Nurbs.. the point of this exercise is to practice layering shaders. Nurbs have automatic "UVs" -- which map your texture to the surface.
If you model something "complex" in polygons, you will likely need to unwrap UVs.. we will go over that in the next class.
If you wanna try unwrapping UVs anyway, you can look in maya help for "UV texture editor", and search for it in Digital Tutors.
